Mexican Chocolate Brownies

Looking at these brownies and you may think there is nothing special about them. Sure, they look like plain ol’ brownies. They even smell like plain ol’ brownies. But they are anything BUT plain ol’ brownies. 

They are Mexican chocolate brownies!

What is Mexican chocolate, you ask? Well, I am sure someone can give a very technical definition of it, but to me Mexican chocolate is a rich chocolate that is flavored with cinnamon. Sometimes it packs a little punch with some chili. All you really need to know is that it’s delicious and that it makes one damn good brownie.

Don’t worry, you don’t need any fancy or expensive Mexican chocolate to make Mexican chocolate brownies. Actually, your favorite brownie mix and a couple of spices will do the trick just nicely.

Now’s the time I will throw in my quick unsponsored PSA about my favorite brownie mix. I have still yet to find a brownie mix better than Ghirardelli. In fact, I have no motivation to make my own brownies from scratch because this mix yields some of the best brownies that I have ever made. (No they aren’t paying me to say this. I bought that bulk sized box of brownie mix with my own cash money.)

But I do have a trick to making really good brownie mix even better: Replace the water with milk and oil with butter. It will give you the richest, moistest (is that a word?) brownies. 

Now you can not take my advice and use another brownie mix or you can make your brownie batter from scratch. But if you want to make them Mexican chocolate brownies, you will need these three things: cinnamon, cayenne, and nutmeg. 

You don’t need a lot of any of them to pack a punch. In fact, I recommend only using a dash of cayenne. Just enough to give the brownies a little bit of a kick without people actually realizing what it’s from. 

I also used Ceylon cinnamon versus the cinnamon you just buy at the grocery store. I know, you are thinking, “what’s the difference?” If you subscribe to my newsletters you already know the answer. The short story is that the cinnamon that we all know and love isn’t “true” cinnamon. It’s actually a close relative of cinnamon that sort of tastes the same. Ceylon cinnamon is what is used in Mexican chocolate and has a much spicier, richer taste. Of course, if you can’t get your hands on Ceylon cinnamon, you could use the cinnamon you have in your spice cabinet. I am lucky enough to live next to a great spice shop, so I am pretty well stocked with a couple different varieties of cinnamon.

After the spices are added, they are just like any other brownie. Mix up the batter and pour it into a pan. I like to line my pans in parchment so that I can easily lift out the brownies when they are done. 

The parchment make it so much easier to get the brownies out of the pan that way they can cool faster…which means you can cut into them faster! The worst part of making brownies is the waiting! Sometimes I will stick them in the fridge to help them cool faster.

If you find that your brownies don’t have enough cinnamon or cayenne, you can always dust them with a little bit of powdered sugar mixed with either….or both. If you want really rich brownies, you could sprinkle on some cocoa powder with some cinnamon mixed in. You can’t go wrong with whatever you do. The brownies are just delicious on their own, but with the added spices they are just at a whole other level. Definitely not your plain ol’ brownie!

Just make sure you have a cup of milk handy when you dive in!

Ladurée Macaron Recipe (and VIDEO!)

Ladurée Macaron Recipe

I am one of those people who get something in their head and will stop at nothing to figure it out. Example, these macarons. I have made many French macarons in the past, but about every other time I would make them, something would go wrong. They would either crack, be too bumpy, or would just fall apart. 

Then I stumbled across the Laudrée macaron recipe and I felt like my prayers had been answered! Of course this recipe would produce perfect macarons every time, right? Well, not quite. The secret is that you have to follow the recipe exactly. Who knew?

The first time I made the recipe they tasted great, but were just too bumpy. They are certainly not smooth and glossy like Ladurée’s. Turns out that I missed a key step in the process: adding in extra egg white after the batter has been mixed.

The next time, I made sure to get all my measurements just right and follow the steps exactly….and they turned out perfectly! To make sure that it wasn’t a fluke, I tried it again. Once again, perfect macarons!

I could walk you through the whole process of making the Ladurée macaron recipe, but honestly, it’s kind of complicated. I thought it would just be better to show you! So I made a video that shows you, start to finish, how I made them. After the video, I will share with you some of the key steps that I have learned over a couple years of making macarons. 

 

Tips for perfect macarons:

  1. Weigh your ingredients. Weighing them ensures that your recipe is exactly the same every time.
  2. Sift, sift, sift. You will notice that I sifted about 4 different times in this video. By doing that, I know that I will have the smoothest possible macaron. It also helps to process the almond flour and powdered sugar together, too. (Notice a difference in the texture of the green vs. the pink macarons? The pink ones were not processed.)
  3. Use “aged” eggs. I let my eggs sit out over night. Not only is it easier to separate room temperature eggs, but they make a better meringue.
  4. Wipe down your mixing bowl with vinegar. The vinegar removes any fate deposits from the bowl which could prevent you from getting that perfect meringue.
  5. Add sugar in stages. When whipping up the meringue, it’s best to add the sugar in stages to make a more stable meringue. 
  6. Don’t over whip the eggs. My issue with previous recipes was that I beat my eggs until they were too stiff which caused them to crack. This recipe tells you to just whip the eggs for one minute between each addition of sugar. 
  7. Don’t under mix the batter. Another issue I had was that I didn’t want to over-mix the batter, so I ended up under-mixing it. That made the macarons too grainy and chewy.

That’s it! I promise that if you follow this recipe exactly, you will have perfect macarons every time.

I will also add that I only made a third of the recipe (well, roughly a third….I measured around only using 2 eggs), which yields about 12 macarons. The full recipe calls for half a dozen eggs, and I didn’t want to waste all those eggs on trial and error. I will share the full recipe in the recipe box below, but also give you my measurements if you only want to 12 macarons instead of 36. 

Ingredient measurements for 12 Macarons:

  • 90 grams of almond meal
  • 80 grams of confectioners sugar
  • 70 grams of granulated sugar
  • 66 grams egg whites (about 2), reserve 1 tsp to fold in later
  • 1 pinch cream of tartar (optional)
  • 1/2 tsp vanilla extract (optional)

Of course, to me, the best part of a macaron is the filling! I filled mine with white chocolate ganache and raspberry jam. But you could also fill it with buttercream, lemon curd, Nutella, or any number of your favorite spreads, jams, or frostings. The world is your oyster-shaped macaron!

Salted Caramel Sauce

Sometimes I forget how easy it is to make homemade caramel. Caramel sauce to caramel candies, the process of making any form of caramel is so easy and so delicious. This salted caramel sauce was a happy byproduct of a recipe I will be sharing with you later, but has proven to be a handy addition to everything from vanilla ice cream to apple slices. 

If you are planning any sort of gathering this Fall, this would be an excellent addition to your dessert. Making brownies? Add salted caramel sauce. Cheesecake? Add salted caramel sauce. Have a clean spoon you don’t know what to do with? Use it to eat this stuff out of the jar. Yeah….its pretty freaking delicious.

Also, this exact same recipe would make some wonderful salted caramel candies you could give away as a party favor of holiday treat. All you have to do is let the sugar boil a little bit longer until it gets to a soft ball stage. Here is a handy chart to figure out how long to cook sugar to get it to different stages of caramel.

Cookie Dough Cake

Cookie-Dough-CakeMy husband turned the big 3-0 this past week. And we couldn’t let the occasion pass without a little celebration and a cake! Since my husband isn’t a huge fan of cake, but does love a good bowl of ice cream, I decided to merge once of his favorite ice cream flavors with a cake, resulting in cookie dough cake!

Cake filled with bits of cookie doughNow, I do not make cake often, so I relied heavily on some experts for the cake and icing recipe. The cake is a vanilla pound cake, a recipe that I got when I took a cake decorating class last year at Johnson Wales. The icing recipe was adapted from a Martha Stewart butter cream recipe. I pared down the recipe by about a third, then replaced some of the granulated sugar with brown sugar so that it had more of a cookie dough flavor.

But the real icing on the cake, so to speak was the bits of cookie dough. I took my favorite chocolate chip cookie recipe, left out the egg, and added a touch of milk instead. I then piped little dollops of cookie dough between each layer, pressing down the top layer to flatten them out a bit.

Crumb coat of brown sugar icingOnce all the layers were stacked, I lightly frosted the top and sides of the cake to make a crumb coat, sealing in all the crumbs.

Chocolate chip covered cakeClearly my frosting skills need some work. Fortunately, there was an easy solution to the problem: covering the cake in chocolate chips! I started by sprinkling them on the top then pressed them into the sides.

Vanilla cake filled with cookie dough covered in chocolate chipsBecause I had some of that cookie dough left over, I just pipped a bit more dots of dough around the edge. I might have also just eaten it straight from the bowl.

Slice of cookie dough cakeMy husband and I both shared a slice right away, eager to dig in. While definitely on the super sweet side, the little bites of cookie dough were a delightful surprise!

Cookie-Dough-Cake7It was a great way to usher my husband into the next generation. Unfortunately for him, he will be there alone. What he doesn’t quite understand is that once I turned 29, I just stopped aging. Sure, I may celebrate the anniversary of my birthday, but I will be 29 at least until I have a child that turns 29. I’m pretty sure that’s a law of physics…or something….

White Chocolate Brownies

These sweet little cake-like bars posed a challenge for me. Not in making them. No, they were really easy to make. In what to name them. Can you call something a brownie if its not brown, but it is made with chocolate? Maybe calling it a white chocolate blondie would have been more appropriate.

Making these brownies was far less complicated. And honestly, they came to me on whim. I wanted to make something using the Easter candy I had picked up at CVS when I should have been buying allergy medicine. After scarfing down half a bag of M&Ms, I knew I had to use up the rest.

I adapted a brownie recipe using white chocolate chips instead of milk chocolate, which worked out surprisingly well. I used a bit less butter and sugar since white chocolate has more fat and is more sweet. But whipping them up was rather fool proof. If I were making them any other time of the year, I probably would have left them plain or added normal chocolate chips. But because Easter is around the corner, and like I said, I had the candy, I decided to throw those in for some color.

I was pleasantly surprised how rich the white chocolate flavor actually was. I thought they may just taste like vanilla cake, but the chocolate flavor really stands out and makes these brownies fudgey-er than cake. Which is how a brownie should be, right?
