Sunday is Cinco de Mayo which means Mexican recipes are on the top of my mind. Actually, growing up 20 miles from Mexico, Mexican food is always at the top of my mind. And if you have ever had a fresh tortilla from an authentic Mexican food restaurant, you know there is nothing better.
For the longest time, I thought fresh tortillas were only something I could get from the local Mexican food restaurant/grocer or Central Market (a grocery store in Texas). But tortillas can be easily made at home.
Seriously, I bet you have everything you need to make tortillas from scratch in your kitchen, right now. Since I prefer to eat whole wheat tortillas, this recipe uses whole wheat flour, but you can replace the WW flour with AP flour if you prefer.
Whole Wheat Tortillas
In a large bowl mix together:
-1 cup whole wheat flour
-1 cup all purpose flour
-1 tsp salt
-1 tsp baking powder
Pour in:
-3/4 cup water, plus more if needed
-3 tbsp olive oil
Mix together with a spoon or spatula until everything comes together. With your hands, kneed the dough for about 5 minutes (this can be done in a stand mixer with a hook attachment, too).
Divide dough into 8 to 10 equal portions and roll into individual balls. On a floured surface, roll out the balls into very thin discs. Place rolled dough onto a slightly greased pan over medium-high heat and cook for about one minute on each side. Bubbles should start forming on the top of the dough and the bottom should start to brown.
See how easy that is? Then when you are done, you can make super simple chicken tacos which are totally elevated because they are on fresh tortillas!
Slow Cooker Chicken Tacos
In a slow cooker, add:
-2 chicken breasts
-1 cup of your favorite salsa
-1 cup chicken broth
Cook on low for 8 hours or on high for 4 hours. When done, pull apart with two forks. Serve on tortillas topped with lettuce, tomato, and cheese.

Had no idea they were this easy! Definitely have everything needed to make them in my pantry. I like Dani’s idea above to bake and make tortilla chips. I will have to try this.

Okay, this looks so good! And it sounds surprisingly easy; I’ve alwYs ignored these kinds of recipies, cuz I assumed they were beyond my cooking ability haha.
