Hazelnut Mocha Cookies

I made these cookies this past weekend to try to get me out of the funk I was in. I find baking therapeutic, or at the very least, distracting. Since it was kind of spontaneous, they were kind of a “what do I have in my pantry” baking experiment. But those that the most fun!

I knew I wanted to use the hazelnut extract, which I still hadn’t used since I bought it back in January. Then I stumbled across the espresso powder and the hazelnuts. It was perfect. I love hazelnuts, chocolate, and coffee, so how could these cookies be anything but wonderful?

And they were. I ate like 6 cookies within 5 minutes. While they were still piping hot, no less. I have absolutely no patience for fresh baked cookies. I won’t tell you how many I have eaten since then (17).
