I really wish I had a gingerbread man shaped pancake mold for these pancakes! Then, in my eyes, they would be perfect. I made these pancakes the day we put up our Christmas tree, and let me tell you, it smelled like Christmas in the apartment. If I had kids, I would totally make these pancakes on Christmas morning. They were delicious!
Gingerbread Pancakes
Ingredients
2 cups flour (I used whole wheat)
4 1/2 tsp baking powder
1/2 tsp salt
2 tsp brown sugar
2 tsp ginger
1 1/2 tsp cinnamon
1/2 tsp cloves
1/2 tsp nutmeg
2 cups almond milk (can sub normal milk)
2 tbsp molasses
1 egg
Directions
1. In a large bowl, mix all dry ingredients together so the spices are evenly incorporated. In a smaller bowl or measuring cup, mix all wet ingredients.
2. Pour the wet ingredients in to the dry ingredients and slowly whisk until batter is completely combined. Do not over whisk.
3. Using a spoon or ladle, pour about 1/4 cup of batter onto a hot griddle. When bubbles start to form on the top of the pancake, about 2 minutes, flip it over. Cook for another 2 minutes, or until a spatuala can cleanly go under the pancake.
Stack up and pile on your favorite pancake toppings, like butter and/or syrup!
