This weekend was incredibly busy. Friday after work I ran through the mall on a last ditch effort to find something to wear for our engagement photos. All I bought was a sweater for B. I did almost talk myself into buying a really expensive Kate Spade dress. Fortunately, I was talked out of that.
Saturday was the big day. We had a lot of fun taking our engagement pics around Baylor’s campus and Waco. I can’t wait to see how the pictures turned out!
Sunday was gross and rainy, so after running some errands, we got in bed and watched a movie. I can’t think of anything better to do on a rainy Sunday afternoon.
The only thing I did this weekend that is chronicled by pictures (except for the engagement pictures, which I don’t have) is the salted chocolate almond bark that I made Saturday morning. This recipe was inspired by these almonds that I get at Trader Joes. They are covered in sea salt and dark chocolate, and they are delicious. So instead of sharing a bunch of pictures about my weekend, I thought I would share this recipe with you!
Salted Chocolate Almond Bark
Ingredients
16 oz. dark chocolate, melted
1 tbs sea salt
1/2 cup chopped or slivered almonds, toasted
Directions
Line a baking sheet with wax or parchment paper.
Pour melted chocolate evenly over the prepared pan. Spread out so evenly distributed in the baking sheet.
Sprinkle the sea salt and almonds evenly over the chocolate.
Place the baking sheet in the fridge or freezer until chocolate is hardened.
Once hardened, remove from the freezer and break apart with hands.
Store in an air-tight container in a cool place (preferably the freezer) until ready to serve or eat.
